Spicy Butternut Squash Soup Fortified with Golden Moment Turmeric Elixir Adaptogens Recipe

Butternut squash is packed with vitamins A, C, and E, as well as potassium and fiber. It also contains carotenoids, which are powerful antioxidants that can help protect against disease. Ingredients:

• The flesh of two medium sized butternut squashes, brushed with olive oil, roasted and cut into 1/2 inch cubes
• 2 tbs of olive oil
• 1 medium onion coarsely chopped
• 2 large apples, peeled, cored and coarsely chopped
• 2 bay leaves
• 6 cups vegetable stock
• 8 ounces of unsweetened coconut milk
• 2 tbs red chili paste
• 1/2 - 1 full packet of Solvasa Golden Moment Turmeric Elixir (for each serving)

How to make this vegan recipe:


In a large pot, sauté onion in olive oil. Add apples and bay leaves and continue to sauté until soft. Add veggie broth and bring to a boil then reduce heat to a simmer for about 20 minutes. Add roasted squash and simmer for additional 10 minutes. Carefully purée in a blender and return to pot. Stir in coconut milk and chili paste and heat. Salt and pepper to taste. Add 1/2 to 1 full packet of Solvasa Golden Moment to a serving and stir well.

Short cut: Use frozen cubed squash or just buy Trader Joe's Butternut Squash soup and doctor it up with some Golden Moment. Enjoy! :)
